Will the Food Industry Botch the Introduction Of Gene-Edited Foods? (sfgate.com) 166

We've reached a milestone in gene-edited food, according to the Washington Post. "Calyxt's 'healthier' soybean oil, the industry's first true gene-edited food, could make its way into products such as chips, salad dressings and baked goods as soon as the end of this year." Calyxt's soybean is the first of 23 gene-edited crops the Agriculture Department has recognized to date.... Scientists at Calyxt, a subsidiary of the French pharmaceutical firm Cellectis, developed their soybean by turning "off" the genes responsible for the trans fats in soybean oil. Compared with the conventional version, Calyxt says, oil made from this soybean boasts far more "healthy" fats, and far less of the fats that raise bad cholesterol. Chief executive Federico Tripodi likes to say the product is akin to olive oil but without the pungent flavor that would make it off-putting in Oreos or granola bars.

It has earned praise from the Center for Science in the Public Interest, a consumer group that says public health will benefit from ingredients with less trans and saturated fats, regardless of how they were developed.... Scientists in university labs and at companies such as Calyxt are already designing plants that are more nutritious, convenient and sustainable, they say.... [U]niversities around the country are working on plants that will withstand droughts, diseases and the ravages of climate change. Such improvements, underway in crops as diverse as oranges, wine grapes and cacao, could protect these plants in the future while cutting down water and chemical use, experts say....

While Congress passed a law requiring food makers to disclose genetically modified ingredients in 2016, those rules will probably not apply to foods made with newer gene-editing techniques, said experts who had reviewed it. Calyxt has marketed its soybean oil to food-makers as "non-GMO," citing the fact that it contains no foreign genetic material. But consumers are unlikely to accept this distinction, said Michael Hansen, a senior staff scientist at Consumers Union. Hansen argues that GMOs developed a negative reputation in part because biotech companies botched public outreach in the 1980s and 1990s. Should businesses repeat that mistake, he said, consumers will reject a promising technology.

Non-GM foods are already a multibillion-dollar market, the article points out, adding that according to a 2016 Pew Research Center report, nearly 4 in 10 American consumers believe genetically modified foods are bad for their health.

Fukushima's Nuclear Signature Found In California Wine (technologyreview.com) 140

An anonymous reader quotes a report from MIT Technology Review: Is it possible to see the effects of the Fukushima nuclear disaster in California wines produced at the time? Today we get an answer, thanks to a study carried out by french pharmacologist Philippe Hubert and a couple of colleagues. "In January 2017, we came across a series of Californian wines (Cabernet Sauvignon) from vintage 2009 to 2012," say Hubert and company. This set of wines provides the perfect test. The Fukushima disaster occurred on March 11, 2011. Any wine made before that date should be free of the effects, while any dating from afterward could show them. The team began their study with the conventional measurement of cesium-137 levels in the unopened bottles. That showed levels to be indistinguishable from background noise.

But the team was able to carry out more-sensitive tests by opening the wine and reducing it to ash by evaporation. This involves heating the wine to 100 degrees Celsius for one hour and then increasing the temperature to 500 degrees Celsius for eight hours. In this way, a standard 750-milliliter bottle of wine produces around four grams of ashes. The ashes were then placed in a gamma ray detector to look for signs of cesium-137. Using this method, Hubert and his colleagues found measurable amounts of cesium-137 above background levels in the wine produced after 2011. "It seems there is an increase in activity in 2011 by a factor of two," conclude the team.

Finally, Non-Compete Clauses Eliminated... For Fast Food Workers (npr.org) 117

"Non-compete clauses are common among professionals, justified by a variety of innocuous-sounding and apparently reasonable business reasons," writes Slashdot reader Beeftopia. "This story shows that, surprisingly, it is a very effective wage suppression mechanism as well, used in industries where it would seem unnecessary."

NPR reports: For many years, fast-food franchises agreed not to recruit or hire one another's workers within the same chain. These "no-poach agreements," as they are known, meant a worker couldn't get better pay or move up the ladder by going to another franchise. Bob Ferguson, Washington's attorney general, said such agreements are clearly illegal. "These no-poach clauses, I think, are an example of a rigged system," he said. "I think you're a worker, you have no idea this clause exists, you haven't signed it. And yet when you try to go to another business to improve your wages, you can't do it, because of this condition in a contract that you never signed..."

Princeton economist Alan Krueger says such restrictions make the labor market work inefficiently, keeping wages artificially low. "I think it's very hard to come up with a sound business justification for this practice, other than reducing competition for workers," he says.

Arby's, Carl's Jr., and five other fast food chains agreed "under pressure" to stop enforcing their non-compete agreements, while eight more chains are currently being investigated by a coalition of 11 state attorney generals. Massachusetts Attorney General Maura Healey reports that 80% of fast food workers are currently locked into non-compete agreements, according to Food & Wine magazine.

"Though a statement from the International Franchise Association argues that these agreements are necessary to keep employees from jumping ship before the expense to train them has been recouped, opponents of these clauses suggest the industrywide benefit of suppressing wages may be the real driving factor."

Our Devices May Listen More Attentively, Patents Filed By Google and Amazon Suggest (nytimes.com) 50

Amazon and Google, the leading sellers of smart speakers, say their AI-powered assistants record and process audio only after users trigger them by pushing a button or uttering a phrase like "Hey, Alexaâ or âoeO.K., Google." But each company has filed patent applications, many of them still under consideration, that outline an array of possibilities for how devices like these could monitor more of what users say and do (the link may be paywalled), The New York Times reports. From the report: That information could then be used to identify a person's desires or interests, which could be mined for ads and product recommendations. In one set of patent applications, Amazon describes how a "voice sniffer algorithm" could be used on an array of devices, like tablets and e-book readers, to analyze audio almost in real time when it hears words like "love," "bought" or "dislike." A diagram included with the application illustrated how a phone call between two friends could result in one receiving an offer for the San Diego Zoo and the other seeing an ad for a Wine of the Month Club membership.

Some patent applications from Google, which also owns the smart home product maker Nest Labs, describe how audio and visual signals could be used in the context of elaborate smart home setups. One application details how audio monitoring could help detect that a child is engaging in "mischief" at home by first using speech patterns and pitch to identify a child's presence, one filing said. A device could then try to sense movement while listening for whispers or silence, and even program a smart speaker to "provide a verbal warning." A separate application regarding personalizing content for people while respecting their privacy noted that voices could be used to determine a speaker's mood using the "volume of the user's voice, detected breathing rate, crying and so forth," and medical condition "based on detected coughing, sneezing and so forth."

Amazon Opens 'Surveillance-Powered, No-Checkout Convenience Store' (geekwire.com) 266

An anonymous reader quotes GeekWire: The first Amazon Go grocery and convenience store will open to the public Monday in Seattle -- letting any person with an Amazon account, the Amazon Go app and a willingness to give up more of their personal privacy than usual simply grab anything they want and walk out, without going through a checkout line... After shoppers check in by scanning their unique QR code, overhead cameras work with weight sensors in the shelves to precisely track which items they pick up and take with them. When they leave, they just leave. Amazon Go's systems automatically debit their accounts for the items they take, sending the receipt to the app. In my first test of Amazon Go this past week, my elapsed time in the store was exactly 23 seconds -- from scanning the QR code at the entrance to exiting with my chosen item...

The company says the tracking is precise enough to distinguish between multiple people standing side-by-side at a shelf, detecting which one picked up a yogurt or cupcake, for example, and which one was merely browsing. The system also knows when people pick up items and put them back, ensuring that Amazon doesn't dock anyone's account for milk or chips when they simply wanted to read the label. The idea is to "push the boundaries of computer vision and machine learning" to create an "effortless experience for customers," said Dilip Kumar, Amazon Go vice president of technology, after taking GeekWire through the store this past week... Apart from the kitchen staff preparing fresh food at the back, we saw only two workers in the 1,800-square-foot Amazon Go store during our visit: one at the beer and wine section to check IDs, and another just inside the entrance to greet customers.

TechCrunch calls it "Amazon's surveillance-powered no-checkout convenience store," adding "the system is made up of dozens and dozens of camera units mounted to the ceiling, covering and recovering every square inch of the store from multiple angles."

The Seattle Times reports that the store "was also criticized by grocery-store workers' unions, which feared an effort to automate the work done by cashiers, the second-most-common job in the U.S."

Wine Glasses Are Seven Times Larger Than They Used To Be (theguardian.com) 220

An anonymous reader shares a report: Our Georgian and Victorian ancestors may have enjoyed a Christmas tipple but -- judging by the size of the glasses they used -- they probably drank less wine than we do today. Scientists at the University of Cambridge have found that the capacity of wine glasses has ballooned nearly seven-fold over the past 300 years, rising most sharply in the last two decades in line with a surge in wine consumption. Wine glasses have swelled in size from an average capacity of 66ml in the early 1700s to 449ml today, the study reveals -- a change that may have encouraged us to drink far more than is healthy. Indeed, a typical wine glass 300 years ago would only have held about a half of today's smallest "official" measure of 125ml.

Study Finds Different Types of Alcohol Can Determine Different Moods (bbc.com) 156

A new study published in the journal BMJ Open says different types of alcoholic drinks change and shape your mood in different ways. For example, spirits may make you feel angry, sexy or tearful, while red wine or beer may make you feel relaxed. The researchers questioned nearly 30,000 people aged 18-34 from 21 different countries for the study. BBC reports: The anonymous online survey, which recruited respondents via newspaper and magazine adverts and social media, found:

-Red wine appeared to make people more lethargic than white wine
-Respondents were most likely to report feeling relaxed when drinking red wine or beer
-More than 40% said drinking spirits made them feel sexy
-Over half said drinking spirits also gave them energy and confidence
-But around a third said they felt aggressive when drinking spirits
-Drinking spirits was more likely than all other drink types to be associated with feelings of aggression, illness, restlessness and tearfulness
-Men were significantly more likely than women to associate feelings of aggression with all types of alcohol, particularly heavier drinkers

Prof Bellis from Public Health Wales NHS Trust said the setting in which the alcohol was consumed was an important factor that the study tried to take into consideration by asking about drinking at home and outside of the home. He said the way different drinks are marketed and promoted might encourage people to select certain drinks to suit different moods, but that this could backfire if it triggered negative emotions. He also said the study revealed a difference between men and women's emotional relationship with different alcoholic drinks.

wjcofkc writes: As a distraction, I decided to get the video-editing software Filmora up and running on my Ubuntu box. After some tinkering, I was able to get it installed, only to have the first stage vaporize on launch. This got me reflecting on my many hits and misses with Wine (software) over the years. Before ditching private employment, my last job was with a software company. They were pretty open minded when I came marching in with my System76 laptop, and totally cool with me using Linux as my daily driver after quickly getting the Windows version of their software up and running without a hitch. They had me write extensive documentation on the process. It was only two or three paragraphs, but I consider that another Wine win since to that end I scored points at work. Past that, open source filled in the blanks. That was the only time I ever actually needed (arguably) for it to work. Truth be told, I mostly tinker around with it a couple times a year just to see what does and does not run. Wine has been around for quite awhile now, and while it will never be perfect, the project is not without merit. Up to 500 million consumers will visit sites run by the company searching for discounts on items including Bordeaux wine, UGG boots, SUVs, and high-end Japanese toilets. Citigroup estimates that Alibaba's sales during this year's event could reach 158 billion yuan ($23.8 billion). For Alibaba, Singles Day will also be a demonstration of how far its cloud business has come in eight years. At the peak of activity, Alibaba's servers may be tasked with processing 175,000 transactions a second from its own sites. "It's the day when the largest amount of computing power is needed in China," says He Yunfei, a senior product manager for Alibaba Cloud. Some Instagram Employees Sell Verification For Thousands of Dollars (mashable.com) 56

This is a guy who knows a guy, a middleman in the black market for Instagram verification, where anyone from a seasoned publicist to a 22-year-old digital marketer will offer to verify an account -- for a price. The fee is anywhere from a bottle of wine to $15,000, according to a dozen sources who have sold verification, bought verification for someone else, or directly know someone who has done one or the other. "These guys pay all their bills from one to two blue checks a month," another message from the middleman added later. The product for sale isn't a good or a service. It's a little blue check designated for public figures, celebrities, and brands on Instagram. It grants users a prime spot in search as well as access to special features. More importantly, it's a status symbol. But it's clear from people who spoke on the condition of anonymity, many of whom have their own blue checkmarks, that a black market for Instagram verification is alive and well. "Instagram has helped create this underground market," the report adds. "While anyone can apply for verification on Facebook and on Twitter, Instagram has made itself exclusive and therefore rather elitist. Influencers who have press clippings and work with big brands on sponsorship deals often can't manage to get that elusive blue checkmark, according to several verified and unverified influencers and people who have sold verification."

Tonight, you'll be eating something else -- without a second bottle of wine, because you can't find your server in the busy dining room. This is not your favorite night out. The right data could have fixed it, according to the tech wizards who are determined to jolt the restaurant industry out of its current slump. Information culled and crunched from a wide array of sources can identify customers who like to linger, based on data about their dining histories, so the manager can anticipate your wait, buy you a drink and make the delay less painful. It can track the restaurant's duck sales by day, week and season, and flag you as a regular who likes duck. It can identify a server whose customers have spent a less-than-average amount on alcohol, to see if he needs to sharpen his second-round skills. So Big Data is staging an intervention. Both start-ups and established companies are scrambling to deliver up-to-the-minute data on sales, customers, staff performance or competitors by merging the information that restaurants already have with all sorts of data from outside sources: social media, tracking apps, reservation systems, review sites, even weather reports.

Amazon Tests Two-Hour Booze Delivery In 12 US Cities (foodandwine.com) 74

An anonymous reader quotes SFGate: Thanks to the Prime Now service, Amazon will now deliver booze to the home, failing house party, mundane family brunch, or other occasion of Prime members in the Bay Area. While Prime Now (a delivery service that comes with a $99 annual Prime membership) is available in 30 different cities across the U.S., the alcohol delivery service can only be accessed in a select 12 of those 30, including San Francisco... Two-hour delivery on booze is free of charge, but if you find yourself in a truly desperate situation, one-hour delivery is available for an extra $7.99. ID's are checked upon delivery by couriers.

A minimum of $30 is required for a delivery, which shouldn't be a problem to hit seeing that prices are slightly higher than standard for what you'd find in your corner liquor store. $26 for a 12-pack of Coronas, $15 for a six-pack of Angry Orchard, and $23 for a bottle of chardonnay, for example... Delivery hours match those of regular Prime Now services, which run from 8 a.m. to 10 p.m.

Amazon is competing with local liquor-delivery services in the Bay Area, according to the article, as well local services in the Phoenix metropolitan area. Amazon began testing liquor deliveries in March in two Ohio cities, then slowly began rolling it out to more, according to Food & Wine magazine (which has a complete list of the 12 cities). "Unlike other markets such as Seattle, which was the first to get alcohol delivery via Prime Now back in 2015, and Manhattan, which just got Prime Now alcohol delivery this past June, Portland can only order beer and wine, and not spirits, through the service. If Portlanders want spirits in a hurry, they'll have to hunt it down a different way like some sort of bourbon-loving caveman."

Amazon is also testing two-hour liquor deliveries in Los Angeles, Chicago, Minneapolis, San Diego, and Richmond, Virginia.

Scientists Create Smart Labels To Tell You When To Throw Away Expired Food and Makeup (sciencemag.org) 74

At the 254th National Meeting and Exposition of the American Chemical Society, researchers are presenting a low-cost, portable, paper-based sensor that can let you know when to toss food and cosmetics. The sensor can detect antioxidants in tea and wine, and be used to explore remote locations, such as the Amazon rainforest, in search of natural sources of antioxidants. "I've always been interested in developing technologies that are accessible to both industry and the general population," Silvana Andreescu, Ph.D., says. "My lab has built a versatile sensing platform that incorporates all the needed reagents for detection in a piece of paper. At the same time, it is adaptable to different targets, including food contaminants, antioxidants and free radicals that indicate spoilage." Phys.Org reports: What sets Andreescu's sensors apart from others, she says, are the nanostructures they use to catch and bind to compounds they're looking for. "Most people working on similar sensors use solutions that migrate on channels," Andreescu says. "We use stable, inorganic particles that are redox active. When they interact with the substances we want to detect, they change color, and the intensity of the change tells us how concentrated the analyte is." Additionally, because all of the reagents needed to operate the device are incorporated in the paper, users don't need to add anything other than the sample being tested. The American Chemical Society has published a video detailing the sensor. Their paper has been published in the journal Analyst.

But my application did not count as activity and I left for a few moments, so Windows decided to answer its own question and restart (breaking a persistent Internet connection)... I've had it. Upon due consideration I now conclude I have been personally f*ck'd with. Driver availability, my apps and WINE permitting, this machine is getting Linux or pre-Windows-8...

Staples Tries Co-Working Spaces To Court Millennials And Entrepreneurs (pilotonline.com) 177

Are there any Slashdot readers who are doing their work in co-working spaces? An anonymous reader writes: Staples office-supply stores is aggressively repositioning its brand to entice new customers like tech entrepreneurs and small businesses, reports The New York Times. "A case in point: Staples' partnership with Workbar, a Boston-based co-working company founded in 2009... Workbar attracts the coveted millennial generation, as well as entrepreneurs, a potential pipeline for new small business customers." Three co-working spaces have now been added to Staples stores, including their original flagship store in Boston, and the Times spotted funky art, skylights, an artificial putting green, as well as gourmet coffee "and -- on some nights -- happy hours with beer and wine."

"This blend of old and new shows how Staples Inc. is digging up its roots as one of the first, and most successful, big-box retailers. Under Shira Goodman, the company's new chief executive officer, Staples hopes it can reverse its years of declining sales, unlike so many other retailers left for dead in the internet age."

The company also reports online orders already make up 60% of their sales, which they hope to push to 80% by 2020, according to the Motley Fool. "Selling products, 50% of which are outside of traditional office supply categories, to businesses large and small has proven to be a resilient business for Staples."

Once compared with Apple for its sleek smartphones and charismatic leadership, the Chinese startup is seeking an image makeover as it tries to recover from a sales-growth slide. From a report: And the brand its billionaire co-founder Lei Jun wants to be compared with: Costco Wholesale Corp., the Issaquah, Washington-based warehouse retailer that sells everything from wine and diamond rings to bulging boxes of cereal and fruit at knockdown prices. Xiaomi's revenue will probably reach $15 billion this year as the Beijing-based maker of products ranging from pens and air purifiers to TVs and smartphones adopts a new business model and fine-tunes operations, Lei, 47, said in a recent interview. "We are not Apple," Lei, clad in a black polo shirt and blue jeans, said at Xiaomi's Bengaluru office in India, its biggest overseas market. "We have the same value system as Costco. We want users to enjoy better products at an affordable price."

What happens if that Windows software is a GPU-computing application -- accessing the GPU through HLSL/GLSL/CUDA/OpenCL or similar interfaces? Can Wine or other solutions run that software at a decent speed under Linux? Or is GPU-computing software written for the Windows platform unsuitable for use -- emulated or otherwise -- under Linux? Alcohol Is Good for Your Heart -- Most of the Time (time.com) 125

Alcohol, in moderation, has a reputation for being healthy for the heart. Drinking about a glass of wine for women per day, and two glasses for men, is linked to a lower risk of heart attack, stroke and death from heart disease. From a report on Time: A new study of nearly two million people published in The BMJ adds more evidence that moderate amounts of alcohol appear to be healthy for most heart conditions -- but not all of them. The researchers analyzed the link between alcohol consumption and 12 different heart ailments in a large group of U.K. adults. None of the people in the study had cardiovascular disease when the study started. People who did not drink had an increased risk for eight of the heart ailments, ranging from 12 percent to 56 percent, compared to people who drank in moderation. These eight conditions include the most common heart events, such as heart attack, stroke and sudden heart-related death.

It's Possible To Hack a Smartphone With Sound Waves, Researchers Show (cnbc.com) 41

A security loophole that would allow someone to add extra steps to the counter on your Fitbit monitor might seem harmless. But researchers say it points to the broader risks that come with technology's embedding into the nooks of our lives. John Markoff, writes for the NYTimes: On Tuesday, a group of computer security researchers at the University of Michigan and the University of South Carolina will demonstrate that they have found a vulnerability that allows them to take control of or surreptitiously influence devices through the tiny accelerometers that are standard components in consumer products like smartphones, fitness monitors and even automobiles. In their paper, the researchers describe how they added fake steps to a Fitbit fitness monitor and played a "malicious" music file from the speaker of a smartphone to control the phone's accelerometer. That allowed them to interfere with software that relies on the smartphone, like an app used to pilot a radio-controlled toy car. "It's like the opera singer who hits the note to break a wine glass, only in our case, we can spell out words" and enter commands rather than just shut down the phone, said Kevin Fu, an author of the paper, who is also an associate professor of electrical engineering and computer science at the University of Michigan and the chief executive of Virta Labs, a company that focuses on cybersecurity in health care. "You can think of it as a musical virus."
